Brown Butter Banana Cake With Cream Cheese Frosting

Ingredients: For the cake: – 1 and 1/2 cups (345g) mashed bananas (about 4 medium or 3 large ripe bananas) – 3 cups (375g) all-purpose flour (spooned & leveled) – 1 teaspoon baking powder – 1 teaspoon baking soda – 1 teaspoon ground cinnamon – 1/2 teaspoon salt – 3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature – 1 cup (200g) granulated sugar – 1/2 cup (100g) packed light or dark brown sugar

– 3 large eggs, at room temperature – 2 teaspoons pure vanilla extract – 1 and 1/2 cups (360ml) buttermilk, at room temperature For the Brown Butter Cream Cheese Frosting: – 1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature – 12 ounces (339g) full-fat brick cream cheese, softened to room temperature – 4 cups (480g) confectioners’ sugar – 2 teaspoons pure vanilla extract – 1/2 teaspoon salt

Instructions: 1. Preheat the oven to 350°F (177°C) and grease three 9-inch round cake pans, lining them with parchment paper rounds. Grease the parchment paper as well.

1. Mash the bananas and set them aside. 2. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.

Using a mixer, beat the softened butter, granulated sugar, and brown sugar together until smooth and creamy. Add the eggs and vanilla, beating until combined. Then mix in the mashed bananas. 

With the mixer on low speed, gradually add the dry ingredients to the wet ingredients in three additions, alternating with the buttermilk. 

Divide the batter evenly between the prepared cake pans and bake for 22-26 minutes, or until a toothpick inserted into the center of the cakes comes out clean. 

1. Once baked, remove the cakes from the oven and allow them to cool completely in the pans on a wire rack. 2. For the frosting, brown the butter in a skillet over medium heat until it turns a nutty brown color. Once browned, remove from heat and refrigerate until solid.

In a large bowl, beat the solid brown butter until creamed. Add the cream cheese and beat until combined and creamy. Then add the confectioners’ sugar, vanilla, and salt, beating until smooth.
