Cheeseburger Soup

Cheeseburger Soup

Ingredients 1/2 pound ground beef 4 tablespoons butter, divided 3/4 cup chopped onion 3/4 cup shredded carrots 3/4 cup diced celery 1 teaspoon dried basil

– 1 teaspoon dried parsley flake – 1-3/4 pounds (about 4 cups) cubed peeled potatoe – 3 cups chicken broth – 1/4 cup all-purpose flour – 8 to 16 ounces Velveeta, cubed – 1-1/2 cups whole milk – 3/4 teaspoon salt – 1/4 to 1/2 teaspoon pepper – 1/4 cup sour cream – Optional: Onion rings and thinly sliced green onion

Cook the beef in a large pot on medium heat until it's not pink anymore, about 6-8 minutes. Drain the beef and set it aside. 

In the same pot, melt 1 tablespoon of butter on medium heat. Add onion, carrots, celery, basil, and parsley. Cook until the vegetables are soft, around 10 minutes. 

Add potatoes, broth, and the cooked ground beef to the pot. Bring it to a boil, then lower the heat and let it simmer with the lid on until the potatoes are soft, about 10-12 minutes. 

Meanwhile, melt the remaining 3 tablespoons of butter in a small skillet. Add flour and cook until it's bubbly, about 3-5 minutes. Add this mixture to the soup and bring it to a boil again. Cook and stir for 2 minutes. 

Reduce the heat to low. Stir in cheese, milk, salt, and pepper. Cook until the cheese melts. Remove from heat and blend in sour cream.
