Cherry Clafoutis Recipe


– 3 egg – 2/3 cup + 2 tsp sugar, divided – 1/4 cup all-purpose flour – pinch of salt – 3/4 cup heavy cream – 3/4 cup whole milk – 1 tsp vanilla extract – 1 tsp almond extract


Preheat the oven to 400°F. Prep a 10-inch oven-safe pan (preferably cast iron but a ceramic baking dish works too!) by rubbing the unsalted butter all along the bottom and sides of the pan.

To a large bowl, add the eggs and sugar and whisk with an electric mixer until combined and foamy.

Add in the cream, milk, and extract, and continue whisking until smooth and combined.

Add in the flour and salt, and again whisk just until smooth and combined.

Dump the cherries into the prepared pan and spread them out.

Bake the clafoutis for 30 to 45 minutes, depending on how hot your oven gets.
