Deruny- Ukrainian Potato Pancakes

5 medium size potatoes peeled, about 1.5 lb 1 medium size onion, peeled 1 egg 3 tbsp of all-purpose flour 1 tbsp of sour cream 1/4 tsp baking soda 1 tsp salt and pepper to taste ¾ cup to 1 cup vegetable oil or Salo melted (for frying), pig fat-lard Optional: 1-2 cups of sour cream for serving if desired

INGREDIENTS

In a big bowl, grate the potatoes and onion using the star-shaped grater holes 

Then, add flour, egg, sour cream, salt, pepper, and baking soda to the potato mixture and mix it all together.

Take spoonfuls of the potato mixture (about 1 heaping tablespoon) and put them in the pot.

Frying each side until they turn golden-brown, which takes about 2-3 minutes per side. 

Keep doing this until you've used up all the batter. Finally, serve the potato pancakes warm with a dollop of sour cream on top. Enjoy your meal!
