Cheeseburger Soup

Flavorful Chicken Fajitas

Ingredient – 4 tablespoons canola oil, divided – 2 tablespoons lemon juice – 1-1/2 teaspoons seasoned salt – 1-1/2 teaspoons dried oregano – 1-1/2 teaspoons ground cumin – 1 teaspoon garlic powder – 1/2 teaspoon chili powder

– 1/2 teaspoon paprika – 1/2 teaspoon crushed red pepper flakes, optional – 1-1/2 pounds boneless skinless chicken breasts, cut into thin strip – 1/2 medium sweet red pepper, julienned – 1/2 medium green pepper, julienned – 4 green onions, thinly sliced

In a big bowl, mix together 2 tablespoons of oil, lemon juice, and seasonings. Add the chicken and coat it well with the mixture.  

In a large heavy skillet, like a cast-iron one, cook the peppers and onions in the remaining oil until they're just starting to get soft. 

Take the chicken out of the fridge and discard the marinade. Cook the chicken in the same skillet over medium-high heat until it's not pink anymore, which usually takes about 5-6 minutes. 

Put the peppers and onions back in the skillet with the chicken and heat everything up together. 

Spoon some of the chicken and pepper mixture down the middle of each tortilla. Fold the tortillas in half. Add any toppings you like, then fold them in half again
