INGREDIENTS – 1 ½ cups rolled oats (see Tip) – 1 teaspoon baking powder – ¼ teaspoon baking soda

– ¼ teaspoon salt – 2 large egg – 1 cup mashed ripe banana (about 2 medium-large) – ⅓ cup packed brown sugar

– 3 tablespoons canola oil – 1 teaspoon vanilla extract – ½ cup mini chocolate chip

DIRECTIONS 1. Preheat oven to 350°F. Grease mini muffin tin. 2. Blend oats, baking powder, soda, salt. 3. Add eggs, banana, sugar, oil, vanilla; blend.

4. Stir in chocolate chips. 5. Fill muffin cups. 6. Bake 15-17 mins until toothpick clean.

7.Cool in pan for 5 mins, then transfer. 8. Enjoy these delicious mini muffins!
