Foolproof Macaron Recipe

Ingredients: – 1 cup (100g) almond flour – 1 3/4 cups (210g) powdered sugar – 3 large egg whites, at room temperature – 1/4 cup (50g) granulated sugar – Gel food coloring (optional) – 1/2 teaspoon vanilla extract (optional) – Buttercream, ganache, or jam for filling (optional)

Instructions: 1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper or silicone mats.

In a food processor, combine the almond flour and powdered sugar. Pulse until finely ground and well combined. Sift the mixture into a large bowl to ensure there are no lumps. 

In a separate bowl, beat the egg whites with an electric mixer until foamy. Gradually add the granulated sugar, continuing to beat until stiff, glossy peaks form. 

Gently fold the almond flour mixture into the egg whites until just combined. Be careful not to overmix, as this can deflate the batter. 

Transfer the batter to a piping bag fitted with a round tip. Pipe small rounds onto the prepared baking sheets, leaving space between each one. 

Tap the baking sheets firmly on the counter to release any air bubbles. Let the macarons sit at room temperature for 30-60 minutes, until a slight crust forms on the surface. 

Bake the macarons in the preheated oven for 15-18 minutes, rotating the baking sheets halfway through, until the macarons are set and have developed feet.  

Once cooled, pair up the macaron shells according to size. Pipe or spread your desired filling onto the flat side of one shell, then sandwich it with another shell.
