Frittata Sandwich

INGREDIENTS Garlic-Serrano Spread:* – 5 medium cloves garlic, peeled – 1 egg – 1/4 teaspoon fine grain sea salt

– teaspoon Dijon-style mustard – 1-2 tablespoons freshly squeezed lemon juice – 1 cup extra-virgin olive oil – 1 medium serrano pepper, stemmed and seeded

Frittata Sandwich: – Focaccia – A ripe avocado – Roasted cherry tomatoes

– Thin slices of good cheddar cheese – Lettuce – Sheet pan frittata

DIRECTIONS 1. Prepare the garlic-serrano spread: Blend garlic, egg, salt, mustard, lemon juice, olive oil, and serrano pepper until smooth.

2. Toast bread slices. 3. Spread garlic aioli on both sides. 4. Add mashed avocado, roasted tomatoes, cheddar, lettuce, and frittata. 5. Close sandwich tightly.

6. Wrap in parchment or waxed paper. 7. Repeat for more sandwiches. 8. Refrigerate until ready to eat, then enjoy!5. Close sandwich tightly.
