Healthy Banana Cake

Ingredients: – 1/2 cup vegetable oil – 1/2 cup brown sugar , packed – 3 large egg – 3 large bananas , very ripe, mashed – 1 tablespoon vanilla extract – 1/3 cup water – 3 cups whole wheat flour – 1 1/4 teaspoon baking powder – 3/4 teaspoon baking soda – 1/2 teaspoon salt – 3/4 teaspoon ground cinnamon – 8 ounces lowfat cream cheese , softened – 1/4 cup nonfat greek yogurt – 1 cup powdered sugar – 2 teaspoons vanilla extract

Instructions: 1. Preheat your oven to 350 degrees F (175 degrees C).

Grease a 9x13-inch baking pan and dust with flour to ensure even coverage.

In a mixing bowl, whisk together the vegetable oil, brown sugar, eggs, mashed bananas, vanilla extract, and water until well combined.

In a separate bowl, sift together the whole wheat flour, baking powder, baking soda, salt, and ground cinnamon. Gently whisk the dry ingredients into the wet ingredients until just combined.

Pour the batter into the prepared 9x13-inch baking pan and spread it out evenly. Bake for 35-40 minutes or until the cake springs back when touched.

Once the cake has cooled, prepare the frosting. In a stand mixer, cream together the softened cream cheese and Greek yogurt until smooth. Gradually add in the powdered sugar and vanilla extract, beating until fluffy.
