Herbed Rice Salad with Peanut

INGREDIENTS – 4 cups cooked rice, room-temperature – 1 cup toasted coconut – 1 cup chopped, toasted peanut

– 3/4 loosely packed cup of EACH of the following: mint, basil, & cilantro leave – 2 small shallots, minced

– 2 tablespoons fresh lime juice, or more to taste – fine grain sea salt, to taste – 1 garlic clove – 1 cup plain yogurt

DIRECTIONS 1. Before serving, it's best to mix this salad. It keeps the herbs fresh and green. 2. In a big bowl, mix together the rice, coconut, peanuts, mint, basil, cilantro, and shallots.

3. Add lime juice and salt to season, then mix again. 4. Mash a garlic clove into a paste with some salt. Stir this into the yogurt.

5. Drizzle the garlic yogurt generously over the salad, and serve the remaining yogurt on the side.
