Homemade Hummus

Ingredient For the hummus – 1 medium garlic clove – 1 15-­ounce can chickpeas (or 1 ½ cups cooked or Instant Pot chickpeas)

– 1 large lemon (¼ cup lemon juice) – ¼ cup tahini – ¾ teaspoon kosher salt

For the garnish (optional) – Fresh cilantro leave – Paprika – Olive oil – Toasted pinenuts 

DIRECTIONS 1. Peel garlic, drain chickpeas. Squeeze lemon juice. 2. Chop garlic finely in a processor. 3. Blend garlic, chickpeas, lemon juice, tahini, salt, and chickpea liquid.

4. Taste and adjust consistency with more liquid if needed. 5. Blend until creamy. 6. Optionally toast pine nuts for garnish.

7. Top hummus with cilantro, paprika, olive oil, and pine nuts. 8. Serve hummus with veggies, pita, or crackers.
