Perfect Lemon Curd Recipe

Ingredients: – 4 large lemons (for zest and juice) – 1 cup granulated sugar – 4 large egg – 1/2 cup unsalted butter, cubed

Instructions: 1. Wash the lemons thoroughly and zest them using a fine grater. Set aside the zest.

Juice the lemons to obtain approximately 3/4 cup of lemon juice. Strain the juice to remove any seeds or pulp. 

In a heatproof bowl, whisk together the lemon zest, lemon juice, sugar, and eggs until well combined. 

Place the bowl over a saucepan of simmering water, creating a double boiler. Ensure the bottom of the bowl does not touch the water. 

Gradually add the cubed butter to the mixture, stirring constantly until the butter melts and the mixture thickens, about 8-10 minutes.  

Remove the bowl from the heat and let the lemon curd cool slightly before transferring it to a clean jar or container. 

Cover the jar with a lid and refrigerate the lemon curd for at least 2 hours, allowing it to set and intensify in flavor.
