Peruvian Seafood Aguadito 

3 tbsp vegetable oil ½ red onion diced 3 cloves garlic 1 cup ground coriander 2 tbsp yellow chili pepper 3 1⁄2 cups chicken broth ½ cup corn kernels ¼ cup red bell pepper ½ cup carrot diced 1 cup rice, uncooked ½ cup peas Mixed Seafood



Place the stainless steel inner pot inside the Instant Pot®. Press Saute and set the time to 10 Minutes 

Add onion, garlic and sauté for about 5 minutes. Then place the ground coriander and yellow chili pepper.

Add the broth or water, the corn, pepper, carrots, and rice.

Make sure the steam release handle is turned to Sealing. Press Soup/Broth and set the time to 15 Minutes.

About 5 minutes before finishing, add the seafood mix and the peas. Serve hot, with lemon and rocoto pepper.
