Cheeseburger Soup

Zucchini Pizza Casserole

Ingredient – 4 cups shredded unpeeled zucchini – 1/2 teaspoon salt – 2 large egg – 1/2 cup grated Parmesan cheese – 2 cups shredded part-skim mozzarella cheese, divided

– 1 cup shredded cheddar cheese, divided – 1 pound ground beef – 1/2 cup chopped onion – 1 can (15 ounces) Italian tomato sauce – 1 medium green or sweet red pepper, chopped

Put the zucchini in a colander and sprinkle it with salt. Let it sit for 10 minutes, then squeeze out any excess moisture. 

Mix together the zucchini, eggs, Parmesan, and half of the mozzarella and cheddar cheeses. Press this mixture into a greased 13x9-inch or 3-quart baking dish. Bake it for 20 minutes. 

While it's baking, cook the beef and onion in a large saucepan over medium heat until the meat isn't pink anymore, breaking it into small pieces as it cooks.  

Add the tomato sauce to the meat mixture and spoon it over the zucchini mixture in the baking dish.  

1. Bake it for about 20 minutes longer, until it's heated through.
